Apple Cake Recipe

This truly is delicious and divine.  In the old days (read PRE children) I could't eat much if any of this as it is so sweet but these days I can knock back a 3x3 inch piece no problem (you have been warned)!

Apple Cake:
¼lb (115g) butter (soft) or baking margarine
3 eggs
1½ teaspoons baking powder
¼ cup milk
1 cup castor sugar
1¼ cups Plain flour
¼ teaspoon salt
1 tin apples (about 400g)
Cinnamon & nutmeg

Syrup:
1 cup castor sugar
1 tin evaporated milk (400g)
Tablespoon butter

Method:
Cream the sugar and butter together.
Mix in the eggs one at a time.
Add sifted flour, baking powder & salt & mix well.
Add milk and mix.
Pour into an oven proof dish and push the apples into the cake mixture.  I cut the apples into smaller chunks but that is personal preference.
Dust with cinnamon and grated nutmeg .


Place in a pre-heated oven of 180ºC for 30 minutes then turn down to 160ºC for 15 minutes (160ºC and 140ºC respectively for fan ovens)

While the cake is in the oven, bring to a slow boil the evaporated milk, castor sugar and butter.
Once the cake has baked take it out the oven and pierce with a knife and pour over the syrup SLOWLY … you want it to sink into the cake and not form a crusty layer on top.
(you want it to soak in even more than this (needs to look like the top picture, so pour SLOWLY)

Enjoy topped with ice cream, vanilla custard, clotted cream or all 3 :-)

** I prefer to make this cake the day before and warm it up as it gives time to really moisten and soak up the syrup but this is not essential.
